Both hand picked and harvested by machine, grapes are sorted and de-stalked before being gently crushed in order to extract the best tannins. Then juice undergoes a traditional fermentation, left on lees for up to 28 days, with
regular pumping in small stainless steal vats, under temperature control process. Then MENUTS goes for maturation in oak barrels for a period of minimum 12 months.
