Grass-growing, green harvesting. After the grapes have been stalked they are crushed. Then they ferment for a period of 3 weeks in temperature controlled stainless steel vats.
During the fermentation, the wine is mixed with the lees 3 or 4 times a day in order to ensure optimum extraction of the best tannins and good colour from the grapes. The wine is aged in oak barrels (2/3% new) for around 12 months depending on the vintage.
La Fleur de Château Haut Piquat comes from the best parcels of the estate. It’s a wine at the same time round and generous. With its deep colour, it breathes out fragrances of ripe fruits which harmoniously expand in mouth.
This wine is excellent with red meat, poultry, game and cheese.
